
Grilling Bone-IN Chicken takes so long on the grill and it is easy for the meat to dry out. To get around this I boil my chicken pieces (adding whatever kinds of spices I feel like) for about 15 minutes. Then I just put them on the grill to finish cooking. Yummy!! I used garlic and onion powder, red pepper, paprika, salt and pepper in the batch pictured. In the picture it is ready to head out to the grill. In the winter I can just put it under the broiler to finish cooking.

Great tip! We have chicken so seldom and when we do, it's usually a small one that I just roast whole. Or bbq on the rotisserie. Or with a beer can up its wazoo.
Love the brownie recipe, too! Must give that a try ~ hmmmmm, maybe while the hubby and kiddies are away....
