Choosing Simplicity... EASY healthy crustless quiche

Reduce fat, prep work and money by simply skipping the crust the next time you make a quiche. This easy (and high protein) recipe can be used for any meal... I usually use it for supper. We eat "Breakfast" for supper on a regular basis.

We are having this recipe for supper.... we have had it several times and really like it. You can make it with ou without meat. My husband preferres it with meat so I generally add either diced and browned bacon or browned sausage, but I like it without added meat just as well. You could also add some veggies (broccoli or spinach) but my family would think I had lost my rocker if I did such a thing!!! LOL!! Something I would like to try is to bake it in a muffin pan or mini muffin pan.... Have you ever done it that way? I think that it would be great for kids and easy to warm up for a hot breakfast later in the week.... Next time I will have to try it.

EASY Crustless Quiche
*This recipe can be easily doubled*

Ingredients:
5 eggs
1/4 cup flour
1/2 tsp baking powder
1 cup cottage cheese
1 cup shredded cheese
salt and pepper to taste
onion/garlic pepper OPTIONAL
Browned bacon or sausage OPTIONAL

Directions:
Put all ingredients except meat in blender and blend till smooth.
Stir in browned optional meat.
Grease a deep dish pie pan and pre-heat oven to 350 degrees F.
Pour batter into pie pan and bake for 30-40 minutes until center is set.

*If you double the recipe it will take longer to bake if you do it all in a pie pan. You could also bake a double batch in a 9x13 baking pan and it won't take more time*

Other than the cottage cheese, this is very similar to one of our favourite summer dishes ~ except I load it up with zucchini!!! (tastes best with a bit of bacon!)

Why is "breakfast for supper" such a treat anyway?! Love it!!
