The fight is on and my family is not going down!

The battle line has been drawn. We will not give up. We will FIGHT to the end.

What are we fighting for?? Our FAMILY! Family in our modern world is under attack and the casualties are continuing to mount.
It is war and we have to stand up, take up our weapons and fight.

In my own family we have had a couple of seasons where we took some good hits and had some deep wounds to bind. With the power of God He heals and restores. It takes constant determination to keep family the focus and keep us strong, connected and operating in love.

One of the best weapons to use in this war for our family is shared meal time. Eating together brings us closer to each other. Conversation, laughter, TIME! Jesus set this example for us by sharing meals with his disciples and with many others. We all have to eat.... we can use this time to BUILD relationships!!!

Eating at home can save your life......

"The slow insidious displacement of home cooked and communally shared family meals by the industrial food system has fattened our nation and weakened our family ties. In 1900, 2 percent of meals were eaten outside the home. In 2010, 50 percent were eaten away from home and one in five breakfasts is from McDonald's. Most family meals happen about three times a week, last less than 20 minutes and are spent watching television or texting while each family member eats a different microwaved "food." More meals are eaten in the minivan than the kitchen."

Sneaky cooking.... yes I do that!! :)

I admit it. I sneak things into our food all the time. Healthy things make it into my kids and husband all the time and they are unaware!! I LOVE it, and their bodies love it, too. My kids really enjoy my chili.... all because it doesn't seem like it has any beans. Anyone else want to sneak some beans into their kids?? :) (I will admit that now that the kids are older they realize that there are beans in my chili, but they don't mind at all.)

Here is my recipe. It is in the Money Wise Simple Family Supper menu plan kit. Enjoy!

Kids will love it CHILI

**Efficient Cooking: Brown up extra meat and Freeze

Crock Pot or Stove Top

Ingredients:

1 pound browned ground meat

2 cans chili beans (use re-fried beans if you don’t have a blender)

1 can water

1 (46 ounce) can tomato juice or V-8 (here is another way to sneak in veggies)

1-2 tsp onion powder

½-1 tsp garlic powder

Salt and pepper to taste

Pasta of your choice (optional)

Crock Pot Directions:

1) Brown meat

2) Blend beans and 1 can of water in blender till smooth. Kids will love this chili because they won’t know that it has fiber and protein rich beans in it. The blending also reduces “bean affect”!!! If you don’t have a blender you can use refried beans instead.

3) Place all ingredients (except pasta) in crock pot. Cover and cook on low 8-10 hours or on high 3-5 hours.

4) During last 45 minutes add pasta and cover and cook till pasta is tender.

Stove Top Directions:

1) Same as above

2) Place all ingredients (except pasta) in soup kettle. Cover and bring to boil on medium/low heat.

3) Once the chili has come to a boil add optional pasta. Simmer for 10 minutes or until pasta is tender.

Side Suggestions: Salad and cornbread. (cornbread mix is EASY, just follow directions on side of box)

So Simple Salsa Chicken and Buffalo Chicken Soup

I've got this So Simple Salsa Chicken recipe cooking in the crock pot as I speak! It is YUMMY and it is an "Efficient Cooking" recipe that will give me extra cooked chicken meat to use later. One of our favorite recipes to use the "Fast Track" chicken meat that we will have is in Buffalo Chicken Soup. Below you will find both recipes. These recipes come from the "MONEY WISE" Simple Family Supper menu. Enjoy!!

So Simple Salsa Chicken

**Efficient Cooking: Freeze remaining chicken and sauce and label

Crock Pot or Stove Top

Ingredients:

3-6 lbs boneless, skinless chicken *amount depends on number of servings you will need for this meal and for the “Fast Track” meal. (if frozen increase cooking time)

1 (16 ounce) jar your choice chunky salsa

1 can diced tomatoes with or without chilies

2 cups shredded cheese

Opt: reduced fat sour cream


Rice (prepare according to package directions)


Crock Pot Directions:

1) Place chicken in crock pot.

2) Pour salsa and diced tomatoes over chicken

3) Cover and cook on Low 5-8 hours

4) Serve on rice and top individual servings with shredded cheese and sour cream


Stove Top directions:

Same as above except simmer in skillet for 30 minutes till chicken is no longer pink in middle of thickest chicken breast.


Side Suggestions: Rice (brown is the best health choice), steamed vegetables, salad




Buffalo Chicken Soup

Fast Track: Use frozen cooked salsa chicken from wk 3

Crock Pot or Stove Top

Ingredients:

4 cups low-fat milk

2 (10 ¾ oz) cans reduced sodium cream of chicken soup

1 can reduced sodium chicken broth

3 cups fast track shredded cooked chicken

1 cup reduced fat ranch dressing

1-8 Tbsp. hot sauce, according to your desire for heat!

Optional: 1 cup small pasta of your choice


Crock Pot directions:

1) Combine milk and soup and broth in slow cooker until smooth.

2) Stir in fast track meat

3) Cover and cook on low for 3 ½ - 5 hours.

4) 30 minutes before serving stir in optional pasta, ranch dressing and hot sauce. **start with a small amount of hot sauce and then add more till it is the heat you want.**


Stove Top:

Same as above except mix and cook in large soup pot. Bring to boil on med/low heat and simmer for 15 minutes before adding pasta, ranch dressing hot sauce.


Side suggestions: dinner rolls, salad

Chicken Lime Tacos

From the November Simple Family Supper Menu Kit:

Chicken Lime Tacos

Crock Pot or Stove Top

Ingredients:

1 ½ lbs boneless skinless chicken (breast or thigh)

¼ cup lime juice (concentrate is fine)

1/2 pkt taco seasoning

½-1 tsp chili powder (optional)

1 cup frozen corn

1 cup chunky salsa

12 flour tortillas

Optional Toppings: Shredded cheese, shredded lettuce, sour cream, salsa

Stove Top Directions:

1) In a sauce pan cover chicken with water and boil the chicken for 10 minutes. Remove from water and shred meat.

2) Combine chicken and remaining ingredients (not the optional toppings) in a skillet and simmer for 15 minutes on LOW.

3) Serve with tortillas and optional toppings.

Crock Pot directions:

1) Place chicken, lime juice, chili powder and taco seasoning in crock pot. Cover and cook on LOW 5-8 hours or until chicken is tender.

2) Remove Chicken, cool slightly. Shred chicken meat and return to juices in the crock pot. Stir in corn and salsa. Cover and cook on HIGH 30 minutes until heated through. (OR you can use the stove and heat everything up in a skillet or put everything in a microwave safe dish and heat in the microwave)

Side suggestions:

Optional toppings, salad, fruit

November! The month of THANKSGIVING! I have to say that of all the fall and winter months this is my favorite one...... and I have so much to be thankful for. CHOOSING SIMPLICITY means choosing to focus on the blessings rather than on any problems or lacks. Gratitude is like a salve that heals the heart!

One thing I am very blessed with is my Simple Family Supper menu plan. Having a planned menu makes life so much easier. The November Menu is ready for you... "Last week, I used Heather's sample menus at Simple Family Suppers. Gut-reaction: I loved it and signed up for three months. Why did I love it?

1. Shopping was a snap. The grocery list was simple, organized, and easy-to-use. It was easy to go through the list and mark off what I already had. It took the pain out of shopping. And Eric can tell you how much I HATE grocery shopping.

2. The menus are SIMPLE. Most took fewer than five steps to complete, several even fewer. In most cases prep time was less than ten minutes. My idea of a good time!

3. Several of the recipes could be cooked in the crockpot or in the stove. So if I was organized, I could throw it together in the morning or early afternoon, and not think about it again until supper time. LOVE that.

4. My family ate all of the meals. That's a winner right now. Several of these types of plans that I've looked at before had fish, pork, etc. in each week's menu. Pumpkin Pancakes

Last night I made pumpkin pancakes for the FIRST time ever... I hadn't ever even eaten pumpkin pancakes before! Have you ever had them?? Well, we enjoyed them and I will be making them again. My youngest, Nate, and I especially liked them.

Here is the recipe I used and below that you will find an extra easy recipe using bisquick (or any pancake mix)

Pumpkin Spice Pancakes


Ingredients:
2 1/2 cups flour
1/4 cup brown sugar
2 TBL baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
1/2 tsp salt
2 cups milk
1 cup cooked pumpkin
1/4 cup oil
2 eggs

Directions:
Mix together all the dry ingredients add remaining ingredients and stir till smooth. Cook in a greased skillet.

NOTE: These pancakes freeze well to be enjoyed again later!

EASY PUMPKIN PANCAKES


2 c. Bisquick
1 egg
1 c. milk
1/2 c. cooked pumpkin
1/2 tsp. cinnamon

Combine above ingredients and cook on griddle as other pancakes. Serve with butter, syrup or powdered sugar.

Using my SECRET WEAPON!!

Soup Season!! I love using my SECRET WEAPON... aka my slow cooker.... to simmer our supper all my busy day long. Yummy supper.... less stress!!! YEAH!!

Here is a good recipe that we enjoyed today!

Chicken and Wild Rice Soup

Crock Pot or Stove Top

Ingredients:

1 lb boneless skinless chicken, cut into bite size pieces

3 cans chicken broth or 4 ½ cups water and chicken bouillon

1 cup frozen mixed vegetables

¾ cup wild rice

½- 1 tsp onion powder

½ tsp garlic powder

½ tsp ground sage

Salt and pepper to taste

Optional Ingredients: 1-2 cups fresh sliced mushrooms, ¾ cup sliced celery, ½ cup baby carrots cut into coin size pieces

Crock Pot Directions:

1) Combine all ingredients into crock pot. Cover and cook on LOW 6-9 hours or on HIGH 4-6 hours.

Stove Top Directions:

1) Combine all ingredients in large soup pan. Bring to boil. Reduce heat to LOW and simmer 20-30 minutes.

Side suggestions:

Dinner rolls, salad

EASY Chicken Pot Pie ... Fast Track!

Efficient Cooking: Life is busy! I have utilized what I call “Efficient Cooking” to save my sanity! I will do extra of something one night so that another night I don’t have to do it. For instance, the biggest way to utilize “Efficient Cooking” is when preparing meats. Browning hamburger is time consuming and messy. My solution is to brown a lot of hamburger one night and then freeze it in meal size quantities in freezer bags to use later. I can throw tacos on the table in no time using meat that is already browned from the freezer!

Fast Track Cooking: This is when I use what I prepared during “Efficient Cooking”. “Fast Track” cooking saves me tons of time and I can get supper on the table extra fast! Yeah!! Simply using what I prepared earlier to save me time now. I plan on using these meals on nights I need to get food on the table with even less cooking time.



EASY Chicken Pot Pie

Oven

Ingredients:

Fast Track shredded chicken (or 2 cups cooked chicken)

1 (16 oz) bag frozen mixed veggies or soup veggies that have potatoes in them, thawed and drained

1 can cream of chicken soup

1 cup all purpose baking mix

1 tsp onion powder

½ cup milk

1 egg

1 cup shredded cheese (optional)

Directions:

1) Thaw fast track chicken

2) Place frozen veggies in microwave safe bowl with some water and cook till defrosted and warm (but do not have to be completely cooked). DRAIN.

3) Pre heat oven to 400 degrees. Spray a 2 qt baking dish with non stick cooking spray.

4) Mix together the chicken, veggies and soup and pour into baking dish. Sprinkle on shredded cheese (optional)

5) Whisk together the remaining ingredients till smooth. Pour over chicken mixture.

6) Bake about 30 minutes till crust is golden brown.

Side Suggestions: salad, steamed veggies
